Bucatini all’amatriciana original Amatrice recipe (with spaghetti)

  • 400 g spaghetti
  • 400 g tomatoes
  • 100 g cured guanciale
  • 60 g aged pecorino cheese
  • ½ glass of dry white wine
  • salt and black pepper
  • chili pepper (optional)

👩‍🍳 Preparation

  • Dice the guanciale and cook it over low heat in a 28 cm non-stick pan, without adding any oil.
  • When the fat becomes transparent, add half a glass of dry white wine and let it evaporate.
  • Add the chopped tomatoes and the chili pepper (optional), and cook for 5 minutes over high heat.
  • Boil the pasta in plenty of salted water.
  • Drain the spaghetti al dente and add them to the sauce along with the grated pecorino cheese.
  • Toss well to coat the pasta evenly and serve immediately.
💡 Chef’s Tip: If desired, the guanciale can be removed before adding the tomatoes and returned to the pan right before tossing the pasta. This prevents it from becoming too crispy and taking on an unpleasant burnt flavor.
📌 Historical Note: The original recipe from Amatrice does not use bucatini but spaghetti. The name “bucatini all’amatriciana” is a modern adaptation, but authenticity calls for durum wheat spaghetti.
